In a large bowl combine 2 ½ cups of old-fashioned oats, ¾ cup almonds, ¼ teaspoon cinnamon, and a dash of salt.
In a small bowl combine ½ cup maple syrup, ¼ cup olive oil, and 1 tablespoon of vanilla extract. Whisk until the mixture is fully combined and syrup-like.
Combine the wet and dry ingredients until all the oats are fully coated.
Evenly spread on a lined baking sheet.
Bake at 300 degrees for 45 minutes, tossing every 15 minutes.
Recipe notes:This recipe is super easy to make. For the ingredients, I recommend using what you have on hand and interchanging as needed. For example, I had less expensive maple syrup in my pantry. I would have loved to use pure maple syrup because the flavor cannot be beaten. However, I used what I had and it still tasted great!Remember to toss around the granola every 15 minutes to ensure an even cook throughout.Top with additional cherries, white chocolate chips, or anything else you think might taste great.
